📝 Ingredients:
- 2 cups chopped rhubarb (fresh or frozen)
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- ¼ cup water
- Zest & juice of ½ lemon
- 2–3 tbsp maple syrup or raw honey (adjust to taste)
- 1 tsp vanilla extract
- 2 tbsp chia seeds
👩🍳 Directions:
- In a small saucepan, combine rhubarb, berries, water, and lemon juice + zest.
- Bring to a simmer over medium heat. Cook for 10–15 minutes, stirring occasionally, until rhubarb breaks down.
- Stir in vanilla and sweetener. Taste and adjust.
- Remove from heat. Stir in chia seeds and let sit for 10 minutes to thicken.
